Sunday: leftover spaghetti

Monday
: whole wheat blueberry pancakes, eggs
whole wheat pancakes
* 2 1/2 cups whole wheat flour
* 4 teaspoons baking powder
* 2 eggs
* 2 cup milk, plus more if necessary (up to 1/2 c more)- I sub coconut milk
* 1 teaspoon salt
* 2 tb maple syrup
* 1 cup blueberries

1. Sift together flour and baking powder, set aside. Beat together the eggs, milk, salt and maple syrup in a bowl. Mix in flour, then fold in blueberries.
2. Preheat a heavy-bottomed skillet or griddle over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbles form- 1-2 minutes. Flip and continue cooking until done.

Tuesday: grilled chicken and simple sesame noodles, broccoli

Wednesday: Slow cooker Moroccan chicken stew with couscous

Thursday: sloppy joes, sweet potato fries

Friday: homemade pizza with hummus, kalamata olives, garlic

Saturday: beef stew in crockpot, caraway bread (using whole wheat instead of Irish wholemeal)
