Menu March 27-April 2, 2011

Sunday: beef roast, carrots, Irish bread (we got take-out one day last week so everything got bumped back a day)

Monday: tacos/nachos/burritos, simple guacamole

Tuesday: turkey sausage, buttered noodles, lima beans

Wednesday: crockpot tex-mex chicken and beans ~ this turned out great. Lots of flavor and was really nice over brown rice. I used my home-canned salsa.

Thursday: Jason’s birthday:
turkey lasagna, french bread, oven roasted asparagus with lemon and garlic, chocolate mousse
I will devise some sort of dairy-less lasagna for me.

Chocolate mousse recipe:
6 oz semisweet chocolate, chopped
3/4 c. whipping cream
2 egg yolks
1/3 c. chilled whipping cream (separate)
1 TB sugar
1/2 tsp vanilla

Whipped cream (for top):
1/2 c. whipping cream
2 tsp sugar

Heat 3/4 c. whipping cream in small saucepan until it simmers. Remove from heat and add chocolate. Stir until melted. Whisk in egg yolks. Set aside to cool.
Beat 1/3 c. cream , sugar and vanilla until stiff peaks. Fold into chocolate. Spoon into glasses, top with plastic wrap and refrigerate 3 hours.
For cream topping: Beat cream and sugar in bowl to soft peaks. Top mousse with cream and serve.

Friday:chicken lettuce wraps (no water chestnuts ~ Jason and Eleanore loathe them), cracklin’ cauliflower ~ this recipe is fantastic. Even Jason loved it and he’s not a cauliflower fan.

Saturday: Chicken paninis, pumpkin spice chickpeas

Other:
Oat and Maple scones (subbing coconut oil for the butter and almond milk for the milk)~ they turned out great! Thanks for the tip on sprinkling them with sugar before putting them in the oven Jez.

easy homemade chocolate syrup for chocolate milk or mochas:
1 c. cocoa powder
1 1/2 c. sugar
1/4 tsp salt
1 1/2 c. water
2 tsp vanilla

Mix the cocoa and water in saucepan. Heat and stir to dissolve. Add sugar and stir to dissolve. Bring to a boil over medium heat and boil for 3 minutes. Remove from flame and add salt and vanilla. Let cool and pour into a glass jar. Will keep in the refrigerator for several months. Way better than Hershey’s and very simple!

    I made the Maple scones, I liked them but they are not very sweet. I will probably sprinkle crystalline sugar on the egg glaze next time I make them.
