Menu June 5-11, 2011

Jason is out of town this week, so we have some “different” menu items đŸ˜‰

Sunday: Either leftovers or quesadillas
cook black beans in crockpot for tomorrow’s dinner and taco salad later in the week

Monday: Black Bean and Brown Rice cakes, blueberries and strawberries
soak flour for tomorrow night’s dinner

Tuesday: Soaked pancakes recipe from Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats
I am LOVING this book. Scrambled eggs with chives from the garden.

Wednesday: Potato and Asparagus salad (testing this recipe for a blogger writing a cookbook, so no link)

Thursday: vegan macaroni and cheese made with nutritional yeast, peas
8 oz cooked elbow macaroni (I use whole wheat)
1 c. almond milk
2 TB flour (I use white with the germ)
2 heaping TB nutritional yeast
2 TB coconut oil

Melt coconut oil over medium heat. Whisk in flour and cook for 1 min. Whisk in almond milk and nutritional yeast and reduce heat. Simmer, continuing to whisk until thickened. Pour over cooked elbow noodles and mix to combine. We like to add peas as well.

Friday: Taco salad (testing this recipe as well)
make bread for pizzas tomorrow

Saturday: homemade french bread pizzas

Other/breakfast:

Soaked oat groats with raisins and Michigan maple syrup
