Menu September 25-October 1, 2011

Sunday: burgers with homemade buns, Mario Batali’s stuffed acorn squash (from the newest issue of Everyday Food~ I can’t find the recipe online)

Monday: swiss chard spanakopita (I never got to make this a few weeks ago since our oven broke), old fashioned pull apart rolls (I used the bread machine to mix the dough), maple apple crisp, Greek quinoa salad
Greek Quinoa salad:
2 c. rinsed quinoa
2 1/2 c. chicken stock
1 jar kalamata olives, drained and coarsely chopped
1 tsp salt
1/2 tsp ground pepper
4 oz crumbled feta
2 chopped tomatoes
1/4 c. white wine vinegar
1/4 c. lemon juice
1/4 c. olive oil
2 TB chopped mint
2 TB chopped oregano (or 2 tsp dried)

Bring chicken stock to a boil in a medium sauce pan. Add quinoa and lower heat. Simmer for 20 minutes, then cool. Mix in all other ingredients and serve room temperature or cold.

Tuesday: Cincinnati coney dogs with crockpot Cincy chili and turkey dogs, homemade buns

Wednesday: Balsamic and Brown Sugar glazed pork (subbing pork steaks for the loin), roasted acorn squash, homemade applesauce, bread sticks

Thursday: spaghetti, green beans (probably the last from the garden), leftover bread sticks

Friday: homemade pizza, apple pie

Saturday: Chicken and Noodles, veg?
